About the Bourbon: Redwood Empire’s “Pipe Dream” bourbon is blended from various barrels sourced from four different states (IN, KY, TN, CA). While the whiskey distilling operation was outsourced, the aging process was completed in California’s relatively cool North Coast climate. The barrels selected for this bourbon were aged a minimum of 4 years, and were hand selected for blending.
I enjoyed the whiskey for this review using a set of Prestige diamond whiskey glasses.
Color: Pale Amber
Nose: Banana cream, honey, green apple, and smoke
Palate: Corn bread and butter scotch candy. Drop a couple cubes in and notes of toasted coconut and peppermint emerge.
Finish: Short lived on the palate with caramel and oak
Assessment: I bought this bottle on a recommendation from someone. I must admit, the “neck pour” or first drink out of the bottle left me feeling underwhelmed. The flavor profile didn’t start to emerge until the bottle had some time to open up. The character of “Pipe Dream” is quite reserved. It has a relatively small flavor profile, but the flavors complement each other well, and a touch of infused sweetness creates nice balance. The texture of the bourbon is the highlight for me; it’s soft, smooth, and easy to drink. It’s the perfect for midafternoon sipping and can be paired with just about anything, even spicier dishes.
While this is a relatively under the radar bourbon, at $30 a bottle, it is well worth a try.
