About the Bourbon: Capitalizing on the success of last years limited bottle release, George Dickel has released a 2020 version of its Bottled in Bond offering. To produce this Tennesse Whisky, Cascade Hollow Distilling uses a process of cold filtering through (sugar Maple) Charcoal, with intent to create a “smoother” whiskey. This production process is modeled after George’s original method for producing his Tennesse Whiskey.
I enjoyed the whiskey for this review using a set of Prestige diamond whiskey glasses.
Color: Maple Syrup
Nose: Oak, coconut, cherry wood, and brown sugar.
Taste: Licorice, salted peanuts, pickling spice, and dark chocolate. Drop a couple of ice cubes and notes of tootsie roll, Dr. Pepper, and charcoal emerge.
Finish: Short-lived with mineral notes, cinnamon, and black pepper.
Assessment: The licorice on the palate of this whiskey is quite forward. It initially consumed the entirety of the “space” on my palate. After some time to adjust however, I realized there are quite a few nice – yet soft flavor notes in this whiskey. I assume, with their stated intent of producing a smooth whiskey, that Cascade hollow wanted an easy drinker, and this is an easy drinker. I do think the trade off however, is a loss of depth. Additionally, the juice would benefit from a bit more weight to the body, which would provide some additional backbone. The finish has some nice spice notes, but fades quickly. Overall, George Dickel Bottled in Bond has a nice flavor profile, and will suit those who prefer a mild whiskey.
